Ingredients

  • 1/3 cup plain Greek yogurt
  • 1/2 cup (heaping) rolled oats
  • 2/3 cup unsweetened milk of choice
  • 1 tablespoon chia seeds or ground flax meal
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 02 tablespoons honey or maple syrup
  • 1/4 cup chopped fresh strawberries
  • 3 tablespoons softened cream cheese
  • Zest and juice of 1/2 lemon

Instructions

Step 1: Prepare the Oats Mixture
In a medium bowl or mason jar, combine the rolled oats, Greek yogurt, milk, chia seeds (or flax meal), vanilla extract, salt, and honey (or maple syrup, if using). Stir thoroughly to ensure all ingredients are evenly mixed.

Step 2: Create the Cheesecake Layer
In a separate small bowl, mix softened cream cheese with lemon zest and lemon juice until smooth and creamy.

Step 3: Assemble the Overnight Oats
Spoon half of the oat mixture into a jar or glass container. Next, layer half of the cream cheese mixture on top, followed by half of the chopped fresh strawberries. Repeat layering with remaining oat mixture, cream cheese mixture, and strawberries, finishing with strawberries on top.

Step 4: Refrigerate Overnight
Seal the container or jar with a lid or cover tightly. Place in the refrigerator overnight (or at least 4–6 hours), allowing the oats to absorb the liquid and flavors to combine.

 

Step 5: Serve and Enjoy
In the morning, stir gently if desired, and enjoy chilled. You can add extra fresh strawberries or a drizzle of honey for garnish, if preferred.
