Description

Learn how to make the ultimate classic meatloaf with this easy, foolproof recipe—packed with expert tips and secrets. It’s irresistibly tender and juicy inside, topped with a tangy tomato glaze that’s perfect for cozy roast dinners or special occasions.

Ingredients

Scale
    • 2 pounds of ground beef (ideally 80/20 for optimal moisture and flavor balance)

    • 1/2 pound of ground pork (optional, but it enhances juiciness)

    • 1 cup of breadcrumbs (either panko or regular)

    • 1/2 cup of whole milk (to ensure moisture)

    • 1 small onion, finely chopped

    • 2 cloves of garlic, minced

    • 2 large eggs

    • 1/4 cup of ketchup

    • 2 tablespoons of Worcestershire sauce

    • 1 teaspoon of Dijon mustard

    • 1 teaspoon of salt

    • 1/2 teaspoon of black pepper

    • 1/2 teaspoon of smoked paprika

    • 1/2 teaspoon of dried oregano

    • 1/2 teaspoon of dried thyme

    • 1/2 teaspoon of cayenne pepper (optional, for a slight heat)

Sticky Glaze Ingredients:

    • 1/2 cup of ketchup

    • 1/4 cup of brown sugar

    • 2 tablespoons of apple cider vinegar

    • 1 tablespoon of Worcestershire sauce

    • 1 teaspoon of Dijon mustard

    • 1/2 teaspoon of garlic powder

    • 1/2 teaspoon of smoked paprika

    • A pinch of salt and black pepper

Instructions

  • Begin by preheating your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing a loaf pan to prevent sticking.

Step 2: Prepare the Meat Mixture

    • In a large bowl, combine the breadcrumbs and milk, letting the mixture sit for about 5 minutes so the breadcrumbs can absorb the liquid, contributing to a moist and tender meatloaf.

    • Incorporate the ground beef and pork into the bowl, followed by the finely chopped onion and minced garlic.

    • Add the eggs, then mix in the ketchup, Worcestershire sauce, and Dijon mustard.

    • Sprinkle in the seasonings: salt, black pepper, smoked paprika, dried oregano, dried thyme, and cayenne pepper.

    • Carefully mix all the ingredients using your hands or a spatula, taking care not to overmix, as this can make the meatloaf dense and tough.

Step 4: Prepare the Sticky Glaze

    • In a small saucepan, stir together the ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard, garlic powder, smoked paprika, salt, and pepper.

    • Heat the mixture over medium-low heat, stirring frequently, until the sugar has dissolved and the glaze has thickened slightly, which should take approximately 3-5 minutes.

    • Take the saucepan off the heat and set the glaze aside to cool slightly.

Step 5: Bake the Meatloaf

    • Apply a generous layer of the sticky glaze on top of the meatloaf prior to placing it in the oven.

    • Bake the meatloaf uncovered for 45 minutes.

    • After 45 minutes of baking, brush another layer of glaze over the meatloaf and return it to the oven for an additional 15–20 minutes, or until the internal temperature reaches 160°F (71°C).

    • For an extra caramelized finish, broil the meatloaf for the final 2-3 minutes.

Step 6: Rest and Serve

    • After removing the meatloaf from the oven, let it rest for about 10 minutes to allow the juices to redistribute before slicing. This resting time allows the juices to settle and redistribute, keeping the meatloaf moist and flavorful when sliced.

    • Cut the meatloaf into thick, hearty slices and serve alongside your preferred sides, such as mashed potatoes, roasted vegetables, or a fresh salad.
